Ingredients
1 | bag | Success® Jasmine or Success® White Rice |
1 | tbsp | vegetable oil |
1 | lb | boneless, skinless chicken, cut into 1-inch pieces |
1/2 | cup | red onion, diced |
1 | ea | red bell pepper, diced |
3/4 | cup | hot mango chutney |
1 | ea | fresh mango, peeled and diced |
1/4 | cup | cilantro, chopped |
Prepare rice according to package directions.
In a large skillet, heat oil over medium heat, add chicken and cook until no longer pink in center. Add red onion and red bell pepper, cook for 5 minutes. Add mango chutney, rice, mango and cilantro. Stir well and serve.
