Slow Cooker Apricot Pork Loin

Ingredients
  • 1 13 oz jar apricot preserves
  • 2 1/2 lb pork loin
  • 1 onion soup mix
  • 4 tbsp white wine
  • 1 cup chicken stock
  • 2 cups rice
Method

Pour chicken stock in a slow cooker. Add onion soup mix and white wine. Stir mixture until completely blended. Don't worry if onion mix is not completely dissolved. Place pork in the middle of mixture. Add a generous portion of apricot preserves on top of each loin. Leave a little on the side for extra garnish. Place slower cooker on low and cook 8-10 hours. For quicker results, place cooker on high the first 2-3 hours, then return to low setting for remainder of cooking process. Depending upon results, you may need to add a little more chicken stock to keep pork from drying out. If needed, add a couple tbsp of white wine to keep flavor in balance. Prepare favorite rice as directed. Serve pork over a heaping bed of hot rice. If desired, add a tsp of leftover apricot preserves on top of pork for garnish and extra flavor.
