Elegant Potatoes


2 lb. unpeeled red potatoes
1 c. sliced green onions
1/3 c. butter
2 c. sour cream
6 slices crisp-fried bacon, crumbled
2 c. shredded sharp cheese
salt and pepper to taste

Cook potatoes in enough water to cover in a saucepan just
until tender; drain. Let stand until cool. Slice potatoes. Sauté
onions in butter in skillet just until tender-crisp. Layer potatoes,
sour cream, onions, bacon, cheddar cheese, salt & pepper ½ at
a time in 13x9 baking dish sprayed with nonstick cooking spray.
Bake at 350 for 20 minutes.
