Pineapple-Cranberry Pork Chops

4 boneless center-cut pork chops, about 1/2 in thick
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 Tbs extra-virgin olive oil
10 oz can crushed pineapple
1 c canned whole cranberry sauce
1 med red onion thinly sliced.

Season the chops with salt and pepper. You can opt to brown the chops in in the olive oil in a skillet, however, I didn't. Rather, I put them in the crockpot a little with the olive oil before the rest of the ingredients. Then mix the pineapple (including the juice), cranberry sauce and onions. Pour on top. Cook on Low for 6-8 hours or High for 3-4 hours.
